Recipe: Sticky BBQ St Louis Ribs

Ingredients (serves 4)
• One rack St Louis pork ribs (1.6–1.9kg)
• Two tablespoons BBQ seasoning or dry rub
• Four tablespoons BBQ sauce
• One tablespoon honey
• Salt and pepper

Method
Preheat the oven to 160°C. Pat the ribs dry, then coat them all over with seasoning, salt, and pepper. Place on a tray, cover tightly with foil, and cook for two and a half hours until tender.

Mix the BBQ sauce and honey together, then brush over the ribs. Return to the oven uncovered for twenty minutes or grill over medium heat to caramelise. Slice between the bones and serve hot with chips or coleslaw.
