Recipe: Braised Steak with Root Vegetables & Rich Gravy
Ingredients (serves 4)
• 800g braising steak, cut into large chunks
• 1 tablespoon plain flour
• 1 tablespoon olive oil
• 2 onions, sliced
• 2 carrots, chopped
• 2 parsnips, chopped
• 2 cloves garlic, crushed
• 1 tablespoon tomato purée
• 300ml beef stock
• 200ml red wine or ale
• 1 sprig thyme or bay leaf
• Salt and freshly ground black pepper
Method
Preheat the oven to 160°C. Toss the steak in flour seasoned with salt and pepper. Heat the olive oil in a heavy casserole dish and brown the beef in batches, then set aside.
Add the onions, carrots, parsnips, and garlic to the pan and cook for five minutes until softened. Stir in the tomato purée, stock, and wine or ale. Return the beef to the dish, add the thyme, and bring to a gentle simmer.
Cover with a lid and cook in the oven for two and a half to three hours until the beef is tender and the sauce thickened.
Serve with creamy mash or crusty bread for a warming, traditional family meal full of rich, hearty flavour.
