Recipe: Maple Glazed Streaky Bacon

Ingredients (serves 4)
• 12 rashers streaky bacon
• 2 tablespoons maple syrup
• 1 tablespoon brown sugar
• A pinch of black pepper

Method
Preheat the oven to 200°C and line a baking tray with parchment paper. Lay the bacon in a single layer on the tray. In a small bowl, mix the maple syrup, brown sugar, and black pepper, then brush half the mixture over the bacon.

Bake for ten minutes, then flip the rashers and brush with the remaining glaze. Return to the oven for another ten to twelve minutes until golden, crisp, and caramelised.

Leave to cool slightly — the bacon will firm up as it rests. Serve as part of a breakfast spread, crumbled over pancakes, or enjoyed as a sweet-salty snack.
