Recipe: Crispy Unsmoked Back Bacon & Poached Eggs

Ingredients (serves 4)
• 8 rashers unsmoked back bacon
• 4 large free-range eggs
• 1 tablespoon white vinegar
• 4 slices sourdough bread
• Butter, for spreading
• Black pepper, to taste

Method
Heat a large non-stick pan over medium heat and cook the bacon until golden and crisp on both sides. Keep warm while you prepare the eggs.

Bring a saucepan of water to a gentle simmer, adding the vinegar. Crack each egg into a small cup, then carefully lower into the water. Poach for three to four minutes until the whites are set but the yolks remain soft.

Toast the sourdough and spread with butter. Top each slice with two rashers of bacon and a poached egg. Season with black pepper and serve immediately for a simple, comforting breakfast or brunch.
