Stewing Steak with Root Vegetables & Thyme
Ingredients (serves 4–6)
• 800g–1kg stewing steak, diced
• 1 tablespoon olive oil
• 2 onions, chopped
• 3 carrots, sliced
• 2 parsnips, sliced
• 2 cloves garlic, crushed
• 2 tablespoons tomato purée
• 400ml beef stock
• 200ml red wine (optional)
• 1 sprig thyme or rosemary
• Salt and freshly ground black pepper
Method
Brown the stewing steak in a casserole dish with olive oil, then set aside.
In the same dish, cook onions, carrots, parsnips, and garlic for five minutes.
Stir in tomato purée, then add stock and wine. Return the beef to the dish.
Add herbs, season, and bring to a simmer.
Cook covered in the oven at 160°C for two and a half to three hours, or gently on the hob, until the beef is tender.
Serve with mash, dumplings, or crusty bread.
