Recipe: Roasted Beef Fillet with Garlic & Herb Butter
Ingredients (serves 4)
• 800g–1kg beef fillet (whole or cut into steaks)
• 1 tablespoon olive oil
• 2 cloves garlic, crushed
• 1 tablespoon fresh thyme or rosemary, chopped
• 40g butter
• Salt and freshly ground black pepper
Method
Preheat the oven to 200°C. Season the beef generously with salt and pepper, then rub with olive oil and herbs. Heat a heavy-based, ovenproof pan over high heat and sear the beef on all sides until well browned.
Add the garlic and butter, basting the meat as it melts. For a whole fillet, transfer to the oven and roast for fifteen to twenty minutes for medium-rare, or to your preferred doneness. For steaks, cook in the pan for three to four minutes each side, then rest.
Allow the beef to rest for ten minutes before slicing. Drizzle with the buttery pan juices and serve with roasted vegetables or creamy mash for a rich, elegant dinner.
