Recipe: Oven-Baked Chicken Thighs with Garlic & Paprika
Ingredients (serves 4)
• 8 chicken thighs
• 2 tablespoons olive oil
• 3 cloves garlic, crushed
• 1 teaspoon smoked paprika
• 1 teaspoon dried thyme
• Salt and freshly ground black pepper
• Lemon wedges, to serve
Method
Preheat the oven to 200°C. In a small bowl, mix the olive oil, garlic, paprika, thyme, salt, and pepper. Rub the mixture all over the chicken thighs, making sure it is well coated.
Place the chicken on a baking tray, skin side up, and roast for thirty-five to forty minutes until the meat is tender and juicy.
Rest for a few minutes before serving with a squeeze of lemon. Delicious with roasted potatoes or a fresh salad — simple, hearty, and full of smoky, garlicky flavour.
