Recipe: Slow-Cooked Beef Brisket with Sticky BBQ Glaze
Ingredients (serves 6)
• 1.5–2kg beef brisket
• 1 tablespoon olive oil
• 2 onions, sliced
• 3 cloves garlic, crushed
• 2 tablespoons tomato purée
• 300ml beef stock
• 200ml BBQ sauce
• 1 tablespoon brown sugar
• 1 teaspoon smoked paprika
• Salt and freshly ground black pepper
Method
Preheat the oven to 160°C. Heat the olive oil in a large casserole dish and brown the brisket on all sides, then set aside. Add the onions and garlic to the pan and cook for five minutes until softened. Stir in the tomato purée, paprika, and sugar.
Pour in the beef stock and BBQ sauce, then return the brisket to the dish. Cover tightly with a lid or foil and cook in the oven for three to four hours until the meat is tender enough to shred with a fork.
Remove the brisket, shred or slice, and mix with the sticky sauce from the pan. Serve with buttery mash, in brioche rolls, or alongside roasted vegetables for a smoky, melt-in-the-mouth meal everyone will love.
