Start with the right chops — thick, bone-in pork chops are the key to juicy, flavourful results. Thinner cuts can dry out easily, while the bone in thicker chops helps retain moisture and enhances the taste as they cook.

Before cooking, season generously with salt and pepper to bring out the natural richness of the meat.

Always cook from room temperature, not straight from the fridge. Remove the chops from their packaging and let them rest for ten to fifteen minutes before cooking — this helps them cook evenly and stay tender.

And finally, let the meat rest once it’s cooked. Give it ten minutes in a warm spot before serving — this allows the juices to settle back into the meat, keeping every bite succulent and full of flavour.

Garlic & Herb Pork Chops – The Perfect Family Dinner

Juicy, golden, and full of flavour — these garlic and herb pork chops make a quick, comforting family meal.

Ingredients (serves 4)
• Four thick bone-in pork chops
• One tablespoon olive oil
• One knob of butter
• Two cloves garlic, crushed
• One teaspoon thyme
• One teaspoon rosemary
• Salt and pepper

Method
Let the pork chops sit at room temperature for ten minutes. Season well with salt, pepper, thyme, and rosemary. Heat olive oil in a frying pan over medium-high heat, then sear the chops for about four minutes on each side until golden. Add butter and garlic, spooning the melted butter over the chops as they cook for another two to three minutes.

Rest for ten minutes before serving to keep them juicy. Serve with mash or roasted vegetables.
