      Recipe: Old English Sausages with Herby Bubble & Squeak

      Ingredients (serves 4)
      • 8 old English sausages
      • 1 tablespoon olive oil
      • 400g leftover mashed potato or freshly made mash
      • 200g cooked cabbage or sprouts, chopped
      • 1 small onion, finely sliced
      • 1 tablespoon butter
      • 1 teaspoon dried mixed herbs
      • Salt and pepper

      Method
      Heat the olive oil in a frying pan and cook the sausages gently for fifteen to twenty minutes until golden and cooked through. Keep warm.

      In another pan, melt the butter and soften the onion for five minutes. Add the cabbage, potato, and herbs, then season well. Press the mixture down into the pan and cook over medium heat until golden on the bottom. Flip sections carefully and cook the other side until crisp and browned.

      Serve the sausages on top of the herby bubble and squeak with a spoonful of brown sauce or gravy for a hearty, traditional British meal.
