Recipe: Grilled Lamb Steaks with Garlic, Mint & Honey Glaze
Ingredients (serves 4)
• 4 lamb leg steaks
• 1 tablespoon olive oil
• 2 cloves garlic, crushed
• 1 tablespoon fresh mint, chopped
• 1 teaspoon honey
• 1 teaspoon Dijon mustard
• Salt and freshly ground black pepper
Method
In a small bowl, mix the olive oil, garlic, mint, honey, mustard, salt, and pepper. Coat the lamb steaks evenly with the mixture and leave to marinate for at least thirty minutes (or overnight if you can).
Preheat a griddle pan or barbecue to medium-high heat. Cook the lamb steaks for four to five minutes per side, depending on thickness, until golden on the outside and tender in the middle.
Rest the steaks for a few minutes before serving. Pair with roasted vegetables, couscous, or a crisp green salad for a light, flavour-packed meal that’s perfect for any occasion.
