Recipe: Pork & Apple Burger with Brie, Rocket & Caramelised Onion

Ingredients (serves 4)
• 4 pork & apple burgers
• 4 brioche or gluten free burger buns, toasted
• 1 red onion, thinly sliced
• Handful of rocket leaves
• 4 slices brie cheese
• 1 dessert apple, thinly sliced
• 4 tablespoons mayonnaise
• 1 teaspoon wholegrain mustard
• 1 tablespoon olive oil
• Salt and freshly ground black pepper

Method

Heat the olive oil in a frying pan and gently cook the red onion for 8–10 minutes until soft, golden, and lightly caramelised.

Cook the pork & apple burgers according to pack instructions until piping hot throughout and nicely browned on the outside. During the final minute of cooking, place a slice of brie onto each burger and allow it to melt slightly.

Mix the mayonnaise with the wholegrain mustard. Lightly toast the burger buns and spread the mustard mayonnaise onto the bun bases.

Layer with rocket leaves, apple slices, the pork & apple burger, and caramelised onions. Finish with the top bun and a little freshly ground black pepper.

Serve with rosemary salted fries, crunchy slaw, or a fresh seasonal salad for a comforting burger packed with sweet apple flavour and savoury pork richness.
