Roast Pork Loin with Crispy Crackling – A Sunday Classic

Boneless pork loin is the perfect choice for a tender roast or thick, juicy steaks. With its smooth layer of fat and rind, this cut delivers rich flavour and golden, crispy crackling every time.

Ingredients (serves 6–8)
• One boneless pork loin joint (about 1.8kg)
• One tablespoon olive oil
• One tablespoon sea salt
• One teaspoon black pepper
• One teaspoon dried sage or rosemary

Method
Preheat the oven to 220°C. Pat the rind dry with kitchen paper and score it lightly with a sharp knife. Rub the joint all over with olive oil, salt, pepper, and herbs. Place it on a wire rack over a roasting tray and cook for thirty minutes to crisp the rind.

Lower the temperature to 170°C and roast for another hour and a half, or until the internal temperature reaches 70°C. Rest the meat for fifteen minutes before carving to keep it juicy.

Perfect with roasted potatoes, apple sauce, and seasonal vegetables for a classic family roast.
