Recipe: Herb-Roasted Boneless Leg of Lamb with Mint & Lemon Butter
Ingredients (serves 6)
• 1.5–2kg boneless leg of lamb, tied or rolled
• 2 tablespoons olive oil
• 2 cloves garlic, crushed
• 1 tablespoon fresh rosemary, chopped
• 1 tablespoon mint, chopped
• Zest of 1 lemon
• 40g butter, softened
• Salt and freshly ground black pepper
Method
Preheat the oven to 200°C. Mix the butter with the garlic, herbs, lemon zest, salt, and pepper. Rub the mixture all over the lamb, ensuring it’s evenly coated. Place in a roasting tray and drizzle with olive oil.
Roast for twenty minutes to brown, then reduce the oven to 180°C and cook for a further one hour for medium, or longer if you prefer it well done. Baste occasionally during cooking.
Once cooked, cover loosely with foil and rest for fifteen minutes before slicing.
Serve with roasted potatoes, green beans, and a spoonful of mint sauce — a fresh, aromatic twist on a traditional lamb roast that’s perfect for family gatherings.
